Winter Squash


Baked/Roasted: Slices/Chunks (about 7 servings per pound)

Mashed (about 4 1/2 servings per pound)

Baked Whole Small Acorn Squash & serve as 1/2 baked (2 servings per squash)


Taste of many winter squash varieties resemble that of pumpkin.

You can slice the whole squash, and bake in ring-like pieces.

Peels are not edible on most.


Unstuffed Squash casserole:  Mix cooked, diced squash, cooked rice, ground beef (or pre-cooked beef crumble pizza toppings), diced tomatoes (or canned), salt, pepper, and any other seasonings.  Bake until done.
