Spaghetti Squash

Cooked (about 10 servings per squash, about 4 servings per pound)

Tips

Slice the squash in half lengthwise. Put open side down in a pan with a bit of water.  Bake until soft.  The best way to get out the spaghetti-like squash, is to scrape it out with a fork in the direction of the ‘spaghetti strands’.

You can also slice the squash into rings.  After cooking you have a nest of spaghetti-like noodles.

It is tricky remembering that the squash looks like a noodle, but is indeed a vegetable.

 

Recipes

Mock Spaghetti & Meatballs: serve cooked with meatballs and red sauce.  Add fruit, milk, and bread (plain sandwich, rolls, garlic bread, or breadsticks) for a complete meal.

Spaghetti Squash and Spinach:  Wilt cut-up spinach with butter, onions and garlic.  Add to cooked spaghetti squash.  Add basil and thyme.
