Estimates based on 1/4 cup serving

Shredded: can add to soups, stir fry, salads, slaw (about 11-12 servings per pound)

Cooked: boiled or roasted (not so popular with kids) (about 7.5 servings per pound)

Mashed: Cooked then mashed. Can add to red sauce for extra flavor/nutrients, or to foods to make red. (about 5 servings per pound)

Pickled: sliced and pickled (not very popular with kids) (about 7 servings per pound)


Beets can last for a few weeks.

Beet greens can be used with other cooked greens.

Beets are a natural food coloring food.  Use a small amount to color foods for special occasions.

Beets are really cool to watch someone peel, as the insides are like tie-dye when peeling.

Gloves are a very good idea when working with beets, they will stain!


Carrot/Apple/Beet Salad:  Shred Carrots, Apples, and Beets. Mix together.  Can add some honey or a vinaigrette.
